What is Lactose?
Lactose is a carbohydrate and one of the main ingredients of human and animal milk which is concentrated. As a disaccharide consisting of glucose and galactose, lactose acts as an energy-carrier in milk. Due to its physiological and functional characteristics, industrially manufactured lactose is used today in a large number of foodstuffs as well as in the pharmaceutical industry.
How is Lactose produced?
Lactose is produced from whey, a byproduct of cheesemaking and casein production, by crystallizing an oversaturated solution of whey concentrate. When manufactured it is purified in several stages, and dried on a fluid bed. Lactose is provided in fine crystals, uniform in color (white to cream) with fluid flow.
